Reset Rainbow Salad

This is a favourite salad of mine that I make and eat as a quick gut health reset.
To me it is a beautiful rainbow in a bowl, it looks so inviting, full of bright colourful goodness, and oh so good for you too!
Of course, you need to be able to tolerate beetroot, and raw beetroot at that, so if you are a strict FODMAPP’s person this would not suit your special needs.
Every year especially around Christmas and the New Year, I get an invite with a special request to make this – now I am spilling the beans on the recipe because I love to share the gut love….

Ingredients
1 large raw beetroot with skin still on – wash and grate
2 large raw carrots with skin still on – wash and grate
Large bunch of mint or coriander
1 heaped tablespoon of unhulled tahini
1 teaspoon of curry powder (I love madras)
Pinch of salt
Olive oil
Apple cider vinegar
2 teaspoons Black sesame seeds
How to:
Add the grated ingredients with chopped herbs and dress – mix well – adjust salt to taste
Sprinkle with back sesame seeds.
Serves 4-6 people
